Avoid Entangling Thorns and stop attacking Ivy while Stone Form makes her impervious. Stay clear of her landing, then resume when she can take damage again. Once Ivy is targetable and you are clear of her landing, use Essence Bomb from cover when the enemy is contesting the wave. Recover near cover if its health cost leaves you vulnerable.
